Jollof Rice Recipe

Ingredients:
• Jollof Rice
• 4 cups / Rice
• 2 lb. red fish (or your choice of fish)
• 3/4 cup olive oil/veggie oil
• 6 1/2 cube of water
• 3 tomatoes (finely chopped)
• 6 oz tomato paste
• 2 onions (peeled and finely chopped)
• 2 spoons of chopped or mince garlic
• 8 Bay leaf
• 3 centimeter Tin slice of Salted dry Fish (optional)
• 1 Bunch scallion (peeled and finely chopped)
• 1 Bunch parsley (for garnish) (optional)
• 2 spoons Dijon mustard
• 1/2 cabbage & 4 carrots
• 2 tea spoon black pepper &
• 1/2 habanero pepper (optional)
• 2 tea spoon salt (up to taste)
• 2 lemons
• 3 stock cubes

Cooking Method:
1. Clean fish season with salt, black pepper, 2 lemons and Dijon mustard

2. Fry only half of the fish in the vegetable oil until both sides are brown. The remaining half is to be added in pot
later. Fish could also be baked until well done (Baking time depends on the fish type)

3. Remove fish and add onions in heated oil, fresh tomato, tomato paste, Chopped garlic, 4 out of the 8 bay leafs, salt, habanero and black pepper 2 stock cubes to taste and the slated dried fish (optional) all to the hot oil and sauté fry until completely brown (until it looks like a paste.

4. Pour water and bring to boil, then put the rest of 3 bay leaves, reduce heat and add the fried and unfried fish for 15 mins zor until fish is cooked then remove fish in to a bowl.

5. Rinse out rice in a plastic bowl to reduce starch then put in a rice cooker or pot to steam rice until done..

6. Add the steam rice, and be sure to break it up if there are any chunks of the rice left when adding in boiling pot. Stir it once and cover, and bring to a boil again.

7. Stir it one more time Reduce heat and cover the pot. Simmer for 20 mins. Only stir it again once all the water have dissolved. Do not stir it more than 4 times total once you have added rice to avoid rice from unevenly being cooked.

8. This is the easiest way yet ever known put the whole pot in a preheat oven 450°F degrees until rice is completely dry until all the water is absorbed

9. Steam the veggies (cabbage and carrots) in a separate pot.

10. Serve Jollof rice with a side of the fish veggies and garnish with the fresh parsley.
